Breakfast: Stir-Fried Eggs and Tomatoes

Stirfried Eggs and Tomatoes

My own recipe. Here’s how to make it:

2 eggs
2 medium tomatoes, chopped
2 tbsp olive oil
salt and pepper to taste

1. Whisk eggs, add salt and pepper to taste

2. Heat olive oil in a wok or skillet over medium heat, and sautee chopped tomatoes until slightly soft (about 5 minutes)

3. Add whisked eggs and stir gently, lifting and pulling cooked parts to the center to allow uncooked liquid egg to flow under and to the sides, until all of the egg is set

4. Take off from heat and serve immediately. Makes one serving.
